    Preheat oven to 325.

    Finely chop carrot , celery , onion , red bell pepper , and white mushrooms .

    Mince garlic .
    garlic: 3 cloves

    In a large bowl combine the ground chuck (80% lean) , chopped carrot, chopped celery, chopped onion, chopped red bell pepper, and chopped mushrooms.

    Add plain bread crumbs , egg , Worcestershire sauce , dried Italian herbs , olive oil , salt , black pepper , and cayenne pepper .

    Mix well to combine.

    Place the meat mixture in a loaf pan.

    Drizzle the top with olive oil .
